I asked Ferdinand about the insulated cooker today. He said the cooks have been using the basket starting with Sunday. This first basket they are using for cooking the beans since that is the longest cooking dish served at the orphanage. They have been soaking the beans overnight and then cooking the beans for an hour on the stove when the first cook arrives in the morning. Then after the time is up on the stove, the cook places the pot of beans in the insulated basket and covers the pot with the two pillows. She leaves it in there for about 4 hours and then puts the pot back on the stove for another 30 minutes in order to add onions, oil and tomatoes. Ferdinand said the first day they tried the cooker the beans were still a little hard when they went to serve lunch. But since then, they've figured out how to make it work for them and it's been working well. He estimates that we're saving an hour and a half of fuel each day (and we serve beans every day). The second basket I am making will be used for cooking rice. Then the last and smaller basket will be used for cooking fish and any other small dishes. Once we institute all three baskets for cooking each day, it looks like we're going to be able to cut way back on how much cooking fuel we have to use.
